Blueberry Ribs

I intended to write more about this dinner. But I am so full.

Simplicity is delicious.

I am working from home today so this means I couldn’t just run out and grab and quick bite near my office. Instead, I needed something quick and easy so that I could get back to working on projects. I whipped this baby up in less than 5 minutes. The sammie consists of one slice whole grain bread from a local baker, one slice sharp cheddar cheese, one slice local tomato, and one egg. It was heavenly.

As you may or may not know, I grew up in the melting (literally) pot of Miami, FL. I know good paella. I miss good paella. I decided to make something in my own kitchen that would satisfy my craving. And while this poor man’s paella was not outstanding, it did taste pretty yummy.

We are leaving tomorrow for a week in Israel. I can’t promise that will be updating frequently, but I will promise to try. Cheers!

Date night

Tonight we headed to our favorite restaurant, Iron Hill Brewery. We drank, had sweet potato French fries and ate crab cakes and chicken breast. Oh la la. I love date night. And savignon blanc. Yes. That.

Obviously.

So, I know I took a mini vacay from the blog and was totally MIA. Sorry about that. I think I needed to step back from it and think about what I really want to do with the blog. Just posting meals gets a bit tired, especially because I have a weird issue of finding something I like and stick with it until I have nightmares about it. In college, I went through a hard core apples with raisins and peanut butter phase. I also dabbled in sourdough toast, but I digress. The point is, I am sure you don’t read this to see my morning eggs and toast. So, I have decided to post more sporadically, but with more substance. That way, you don’t have to see boring toast and eggs and I prevent burn out from the blog. Plus, I get to show you more of my life than just the calories I consume.

That being said, we had my favorite pork chops tonight. I know that I have blogged about this before. These pork chops have become sort of an obsession between the husband and I. I think it’s the way the dry rub messes with the pork. Or maybe it’s the sweet/salty/spicy thing they’ve got going on. OR MAYBE…whatever, they freaking rock.

The secret ingredients are good hungarian paprika and Coleman’s dry mustard. I mix all the yumminess together and coat the pork chops. Then, they go on the grill and in no time, dinner is served!

I hope you all had a great Monday! I exercised, got a haircut and chopped down the rest of my to do list from the weekend. Tomorrow, I have work. Woohoo!

Naughty, Naughty Blogger!

Goooooooooood Afternoon, blog world! I am a million times sorry for neglecting the blog lately. As I mentioned, I was in Michigan last weekend hanging with the bridal party of Kat and Matt. It was amazing. I had never seen Lake Michigan! The coolest part was doing something new. I have done a lot in my short life and thus it is rare that I have not seen a specific landmark in the USA. I blame my grandfather and our yearly summer road trips for spoiling me to death. I also hiked up this very steep sand dune at the Warren Dunes. It was so pretty and so scary and so hard all at once. I had to stop a bunch of times before reaching the top. But, I did reach the top and I was so proud of myself.

As soon as I returned home, I had a bunch of chores to catch up with. Being an adult is amazing, no? Then, I had work. It was a busy couple of days at work and then I had errands to run all day Friday and Saturday and now it’s Sunday. Cah-ray-zay. Life is moving extremely quickly over here. The point of all this is to say that I will be trying to keep up with posting in the near future, but will likely not be blogging at the frequency I used to. This is due to our trip to Israel and Miami in June. I do promise to make sure my blog post are more interesting. I am going to stop posting my breakfasts or lunches that are redundant. I think you guys have seen enough eggs and toast! :)

Once I return for all my travels in June, I have a long list of stuff I want to try to make in my kitchen. So, look forward to that! I am also thinking about signing up for some basic cooking classes at my local community college in the fall. That could be interesting.

It’s a wrap!

By the time lunch rolled around, I was hangry! I speed walked over to Nicole, a cafe jut up the street from my office. I had been drooling to try it and here was my chance! I ordered a Gotham. It was a whole wheat wrap filled with sharp provalone, roasted red peppers, pesto and chicken. It was awesome. I have a feeling I will be stopping by to try more of their yummy looking menu.

So sorry about being MIA for the past few days! I was in Chicago, celebrating the upcoming nuptials of my BFF Kat and her awesome fiancee, Matt. This week promises to be crazy. Ron is out of town tomorrow and Thursday, so dinners will be all on my own. We’ll see if I can cook up anything exciting! Until then, lots of love!
