It has been rainy and dreary here all damn day. So instead of grilling pork chops, I made baked artichoke and spinach pasta. Ron tossed together a salad. Lots of veggies. Tomorrow, I start my new job. So excited and anxious. Wish me luck!

This is whole wheat rigatoni, artichoke hearts, spinach and LOTS of mozzarella cheese. I got this recipe from the most recent Real Simple Magazine. I love artichoke hearts. I could eat a whole can. All. by. myself. Yup, they are yummy. Alright, back to working on my taxes and packing.
