Dog Days of Summer

Not much to report here. This summer has flown by so quickly. Before we know it, it will be Christmas. That is just how it goes. For the past 2.5 weeks, we have been dog-sitting another lab named Riley. He is super sweet and has grown attached to our family. He loves to snuggle with Ron and wrestle with Colby. I know that when his parents return from Africa, he will be happy to see his mom and dad, but sad to leave us. I will miss him, too. Ron, not so much. But I suppose if he woke me up at 2 am every morning to pee, I wouldn’t miss him either.

For dinner on Saturday, I made a roast chicken. Mainly because I hadn’t done it in so long and we had a bunch of sage and thyme left over from the blueberry ribs Ron made a few weeks ago. All I did was stuff the bird with sage, thyme, lemons and garlic and oiled it up and cooked it. It was delicious.

It’s a wrap!

By the time lunch rolled around, I was hangry! I speed walked over to Nicole, a cafe jut up the street from my office. I had been drooling to try it and here was my chance! I ordered a Gotham. It was a whole wheat wrap filled with sharp provalone, roasted red peppers, pesto and chicken. It was awesome. I have a feeling I will be stopping by to try more of their yummy looking menu.

It is another busy night over here. Dinner was a salad and roasted chicken.

Simple grilled chicken

Tonight, we kept it simple. I grilled chicken breast sprinkled with salt n peppa. Ron made a salad. We ate outside because it is cool and breezy.

Shred and Dinner

When I got home, Ron had already put dinner in the rotisserie. So, I changed into my gym clothes and did level one of the 30 day Shred. Jillian totally kicks my ass. It was sooooo goooooood. Dinner was chicken thighs and legs and steamed snow peas. Now, I am snuggled in my pj’s watching the Biggest Loser.

Baked chicken legs

I still feel icky so this will be brief. I baked chicken legs at 400 degrees for 45 minutes sprinkled with Badia garlic and parsley. Ron made a salad with spinach, radishes, yellow peppers and tomatoes with homemade balsamic vinegarette.

Chicken Milanese, Yo.

So this morning, I realized that I had no plan for dinner. I took out some chicken breasts to thaw because I figure’d that I could something with them. I had Chicken Parm in mind but when the new issue of Cooking Light Magazine showed up this afternoon, I found an awesome panfried chicken recipe and that is what I made. As a side, I made brussel sprouts. Holla! Seriously, if you aren’t eating brussel sprouts, you are missing out. Brussel sprouts are gansta. Especially when made like this. I use Ina Garten’s recipe which gives you crispy, salty, yummy sprouts.

The chicken was called Chicken Milanese and is featured in the May 2010 issue of Cooking Light on page 104.
