Dog Days of Summer

Not much to report here. This summer has flown by so quickly. Before we know it, it will be Christmas. That is just how it goes. For the past 2.5 weeks, we have been dog-sitting another lab named Riley. He is super sweet and has grown attached to our family. He loves to snuggle with Ron and wrestle with Colby. I know that when his parents return from Africa, he will be happy to see his mom and dad, but sad to leave us. I will miss him, too. Ron, not so much. But I suppose if he woke me up at 2 am every morning to pee, I wouldn’t miss him either.

For dinner on Saturday, I made a roast chicken. Mainly because I hadn’t done it in so long and we had a bunch of sage and thyme left over from the blueberry ribs Ron made a few weeks ago. All I did was stuff the bird with sage, thyme, lemons and garlic and oiled it up and cooked it. It was delicious.

We like Hike.

After dog day, we headed straight for French Creek State Park for a hike. We did a low impact 2 miles and walked all of it. Colby loves hikes, in fact we don’t keep her on a leash and she thinks it’s fantastic. When we got home, Ron and I were tired. I think Colby was beyond tired. I was in need of some greens, especially since my lunch was not a nutritional superstar. I blended up a green monster. My monster contained: 1 cup skim milk, 2 tablespoons flax oil, 2 big handfuls of spinach, 2 tablespoons white chocolate peanut butter, 1 teaspoon raw honey. Yum!

Dog Day

The weather wasn’t as bad as it had been this morning so we headed out to the park. Colby got a ribbon for being awesome or just being there, whatever. Afterwards, we grabbed sandwiches. Mine was pulled pork and Ron’s was sausage and peppers. We were both starving and these were awesome.

Coffee:Accomplished

I ran out to Dunkin’ Donuts and got this medium iced mocha with skim milk. The weather here is sort of nasty. 52 degrees, drizzly and gray. Hopefully, it won’t mess up our plan for dog days.

Hungry and Indecisive

I hate when I wake up hungry and have no idea what I want. That has happened to me over the past two days. Blerg. This morning, I decided to just eat a huge apple to end the starving part and maybe go get a huge iced coffee from Dunkin’ Donuts. The pictures are focused more on Colby because she loves apples. She even eats the cores when I am done. She is sitting all patient waiting for me to finish so she can nibble on the apple. I am so bummed that tomorrow we have to take her to a kennel. I am going to miss her while we are in Boston. But today is fun day for her. We’re going to Dog Days at a local park and then might do a short little hike in French Creek State Park. Steak and Greens

Happy Friday, y’all. Today was spent driving to Lancaster for a job interview…I GOT IT! I will be working 3 days a week, so I will still have free time to cook and what not. I am so happy about this new development. For dinner, I grilled some skirt steak and asparagus, while Ron tossed a salad together. Yummy and healthy. I am really excited about this weekend- we’re going to “Dog Days” at our local park with Colby. I promise to take lots of pictures. I am also thinking about making these. What do you think? Should I make Brookies? :)

Guac Again

For lunch/snack I had some pretzels and more guac. Boring but delicious!

Breakfast of Champions

So, this morning, I woke up distressed about my blog and went right to work trying to fix it. Now that it is fixed, I am eating chocolate chip oatmeal cookies that I baked last night. I know, not the healthiest choice…but there is oatmeal in them, right? That has to count for something.

In other news, the weather here is awful. Rainy and nasty, which means no puppy play date for Colby. You can see how she feels about the whole thing. She loves puppy play date.

Banana Oatmeal

Good Morning!

This is Colby, my 11 month old black lab, and her favorite thing in the whole wide world is waking me up. She shakes her butt and wags her tail and is generally crazed by the idea of a new day!

This is our kitchen floor where she hangs out while we cook. Sometimes, she will be right behind me. She’s pretty cute.

So, on to breakfast. I have always had a weird relationship with oatmeal. In college, I would make those instant packages in microwave. They were tasty but have a bunch of not so awesome stuff in them. As an adult, my husband would make them for me, but only with water. Nothing else. Not only is that boring, it isn’t tasty. It wasn’t until I stumbled upon Kath Eats Real Food, a blog by a kick ass gal named Kath (duh), that I fell in love with oatmeal. (I should mention quickly that I adore Starbucks new oatmeal, too.)

Kath makes her oatmeal with equal parts milk, oats and water. I used 1/4 cup of each because I find that I get full quickly when it comes to oatmeal. She also puts 1/2 a banana into the oats right at the beginning and stirs the oats the whole time to melt them into the oatmeal. The banana makes this oatmeal. For reals. Here is Kath’s video on oats. To my oatmeal, I added a pinch of salt at the beginning. Once the oats are thickened, I added 1 tablespoon of Bob’s Redmill Flaxseed Meal and 1/2 tablespoon of brown sugar. I also stir in a wee bit of vanilla extract, this doesn’t really taste like much of anything, but the smell is intoxicating. The best part of this oatmeal? THE PEANUT BUTTER!

My favorite peanut butter in the entire universe is Peanut Butter and Co.’s White Chocolate Wonderful. If you haven’t tried it, you are missing out. I use it in my oatmeal but my husband will eat it right out of the jar. In fact, we hide this stuff from each other because we have been known to eat a whole jar in a weekend.

I also had a glass of 2% milk with a little bit of NesQuick chocolate syrup. We use this brand and not Hershey’s (even though we live an hour from Hershey, PA!) because Nestle doesn’t use high fructose corn syrup. While we are not food puritans, we do try to stay away from that nasty stuff. In fact, we generally follow the gospel of Michael Pollan (more on that in future posts).

Anyhow, I have lots to do today before I head of to sunny Pittsburgh, PA to spend time with my family! Look for another post after dinner!
